Generally, addressing an NCO as "Sir" is incorrect, and the almost universal response to such an address is "Don't call me sir, I work for a living." It's a trope that's in pretty much every "new recruit in the military" drill sergeant scene. ( link ) Hell, my mom even said to her kids "don't call me ma'am - my husband works for a living." (She was a Navy wife.)
