Is there any way to limit the number of players ?

I plan to launch some sort of open campaign, on a first connected / first served basis for the players. Is there any limitation or any way to limit the number of connected players ?

No there is not. Once a player has joined the campaign, they can enter the game anytime they want to wether the gm is there or not.

For a workaround -- You could make 2 campaigns. Invite them all to Join your big campaign as a lobby or waiting room. Then on game-day, only send the invite link to your "actual game" (a 2nd campaign in Roll20 terms), to the sub-set of people in the lobby who you want to play on that day. Hope this helps.

But wouldn't it be just delaying the problem, as the invited players on the second campaign/first session would have the link and could directly join on the second session, skipping the lobby part ?

There is a way around that. At the end of "1st session / actual campaign", you the GM would go on the campaign's details page and click KICK on each player's avatar there. This will not only remove them from the 'actual campaign' (while leaving their membership in 'the lobby' intact) but it will also disable the Join link and gives you a fresh new Join link automatically, which you can use for 2nd session / actual campaign. Each week you just rinse & repeat. Invite them in.. play.. kick them out. Everybody stays chilling in the lobby camp.
