I would love it if i as a player could have a sort of "handout" that was just a blank page, where i could write/keep track of stuff

The gm can make one for you. All he has to do is go into the journal tabs, create a handout and give you control / edit of that handout. This will give you your blank page. I do that with my players alot of the time.
