That is likely because there are no first-party races that possess a size category above Medium or below Small.

Goliaths from the EE Player's Companion do count as one size category larger for purposes of carrying capacity.

Unfortunately in the current form it couldn't. It'd have to adjust to a <select> or <radio> to adjust the carrying capacity.
