Is it possible to only have certain journal folders appear on certain maps?  It would help clean up my journal tab a ton if I could only have the folder with the character sheets for a specific adventure desplayed.

No, but you could nest the folders to keeep it a bit more organized. I think the limit of nesting is 4 levels.
