Reviewing the 2ePHB on thief functions.... the Dex table goes only up to 18 for the thief table.... and up to 25 for the ability table. Any source rule table out there that extends the dex for the theif fucntions up 25? I can't seem to stumble my way across one.

I guess you would pull them from the optional rules? they seem to extend to 25.
It is my honest opinion that PHB just does not take into account us choosing unusual races with higher abilities.

But what is interesting (but not surprising) is you have 1-25 for every ability on the ability tables... until you turn to the thief function table... caps at 19... Its an edge case.... but... still. I can find it for everything in the optional rules.. except "Find/Remove Traps"
Have you checked complete guide for humanoids? There might be tables for high abilities, since there are giants and fairies among chosen races.
Deities and demigods gives stat bonuses up to 25.
Maybe it was done on purpose so removing traps would not become too easy? also dex helps to FIND a trap until a certain point i guess..
the Player's Option Skills and Powers willl have them listed under the sub abilities

table 29 in the same book goes to dex 22 it would be easy to see what the scores would be for dex 23-25. it looks like it peaks at +20% but you could say it can be +25% for dex 23-24 and 30% for dex 25

Its a nauance ..... Table 4: Aim and Table 5 Balance take everything else to 25. MS peaks much like FT at the 21/22 mark. Shrug.  Just wanted to make sure I wasn't overlooking it.
for me it don't matter if the tables don't take every stat in account..most of my players are lucky if they get to 21 in some stats...
