can the pathfinder sheet be modified in a way that certain skill will automatically roll twice and take the better?

Turn on edit mode (top of the sheet, next to the settings button). In settings, turn on "show roll templates for customization". Then replace the 1d20 in the macro for your skill to 2d20kh1.
