Will try to keep it simple, if I subscribe to a Pro Account and I make a custom character sheet for my campaign, if my subscription runs off and I return to a 'Free Account' will my players and I lose access to the custom sheet I made for my campaign?

If you go pro and build/tweak your sheet then the subscription expires, the sheet stays usable but not editable. If you for any reason change the sheet, you can not go back to the custom sheet till you renew your subscription.

Nor will you be able to use it in a new game. You may want to make a few "template games" with the sheet before you drop your subscription, just in case.
