I haven't seen a way to do this yet so I'll suggest it: I'd like a checkbox to make the bars visible to all players - that way the a party member can easily see the status of their fellow adventurers.

Click the token, then Edit. Tab over to Advanced, and next to a bar, check the box that reads "See" under player permissions.

You cannot remove a bar from the "bubble" flyout or the token settings popup, however, if you don't put any value in it, the bar graphic won't show. For instance, if you only put a value in the green and red bubbles, only the green and red bars will display above the token on the tabletop.
