Which Pathfinder sheet are you using?  The Community sheet has an option to only show prepared spells on the spellbook chat menu.

I'm not real familiar with the PF by roll20 sheet, but I'm guessing you would need an API script(pro perk) such as  [Script] Pathfinder Actions Chat Menu generator  Which might need to be modified(you could make a polite request to GiGs the scripts author) to only show prepared spells.
