I was wondering if the dynamic lighting system or any system was able to restrict player movement without restricting line of sight. This could be used for things like force fields, windows or in my case, cell bars. Any suggestions?

Instead of assigning control to all players, assign it to that player. Don't bother assigning the token to a character, just use a generic token assigned to a single player. It does take some trust for them not to move it. Of course, in a pinch, you could just drop another instance of their character token on the other side and just tell them not to move it.
