In one of my games, the sheet I have set up to use is the D&D 5e by Roll20 sheet. Yet when I log in and assign them a character it is generating a SRD sheet.

You need to turn on the D&D styling for it to look like the DnD sheet. By having it turned off, it shows the SRD/styleless sheet style.
