You can do this manually at any time by dragging and dropping spells from the Compendium tab. When you do this, make sure your character sheet is not popped out into its own window. To delete a spell, click the lock icon at the bottom of the spell list. there will be little trash can icon next to each spell that you can use to delete it from your list. Charactermancer is intended for leveling, not spell maintenance (Though it would be nice).
