Hi Salerno, IMO, it's best to work with the sheet's author if possible since I've found there are often small adjustments that need to be made to help with a given translation. I just had a quick look and neither of those sheets ( City Of Mist Offical or City-of-Mist ) appear to have had the necessary translation coding (i18n tags, translation.json) done on them yet. The translation coding needs to be done before language translations can be made. The initial sheet author(s) have not been active on roll20(at least on the forums) for a rather long time... It may be safe to assume that another sheet author, preferably someone familiar with the system, would need to volunteer to do the coding and possibly assist you in making an Italian translation. The actual translation coding is not that difficult, but it can take some time depending on the size of the sheet. Do you have any experience tinkering with html code? ;-)
