This is a three step process: Edit the <Creature>, click the Duplicate button to create a "Copy of <Creature>" Character, Rename it to something like "<Creature> (Summon)", put it in the player's journal and give the player control over it. Drag the token to the tabletop. Edit it by double clicking or right-click, edit. Change Represents from "<Creature>" to "<Creature> (Summon)". Save Changes. Edit the "<Creature> (Summon)". Hover the Default Token and click "Remove". With the token you dragged out in step 2. selected, click Use Selected Token. Save Changes. Now the player has a copy of <Creature> in their journal. They can open it just like their character, drag it to the table top, use it's attacks, etc.
