Good number of players in a 3.5 game

What are other GM's experience of running a Roll20 game in regards to the size of the party? I know this would depend on a lot of different factors but there has to be a sweet spot when it comes to party size and game flow using the Roll20 interface.
Four or five players in my experience. Enough players to keep things active, not so many as to make the voice conversation unwieldy.
I would strongly advise against going above 5 and going below 3.

using text instead of voice partys of 6-7 are easy

If you are asking, what can Roll20 handle? The answer is that I have seen (text) games with over 20 people in them. Video/Voice will be far fewer and greatly depends on people's respective systems. What can people handle? That is dependent upon the people.  - Gauss
Don't forget that the DM technically counts as a player, yes you might have only 5 players, but you have 6 people and that extra connection across the world can make a difference.
