Firstly, you should use the Help Center and Send a request to get Roll20 staff attention and a ticket to track your issue. It’s mostly community help here.
Secondly, try editing your handout in another app and pasting the formatted text into the Handout. That’s what I always do, because I find the Roll20 editor both irritating and unreliable. I use a Markdown editor (iA Writer) and previewer (Markup 2) myself.
Oh, thank you for explaining to me how it's done, i'm sorry for this, i will use your advice though, thank you! For now it seems to be working, i hope Roll20 will solve the issue soon!
You really should submit a ticket with console logs. I created a new handout in one of my games. Made a line of text with italics and strike through. Made a new line of italics text. Finally, I made a line of strike through text. They all saved as expected, so I can't duplicate this issue.

With the advent of dark mode, I would not recommend this workflow. Styles applied by the Roll20 text editor will be respected and converted by the Dark Mode styling. Text pasted in by another editor will act unpredictably.

I make heavy use of the text editor and cannot duplicate this either. Make sure to start with fresh clean text. Use the eraser button to remove styling and/or hold the shift button down while pasting, if using text created by another source.
