When creating your own custom sheets is it ok to use existing scripts written for other sheets and to copy code from other sheets?

If they are on the github repos, yes. There is a license there (the MIT License) that is automatically accepted by anyone uploading to those repos. It's a long standing tradition that it's okay to use whatever you want from other sheets, and you are explicitly encouraged to take what works for you.
