Spending experience like Souls from the Dark Souls games.

Wanting to know if it would be possible for players to earn Experience which is collected/recorded and can be later spent on level ups. Working on a homebrew Multiclass system that allows players to level classes as if they were not mulitclassing. I.e you would spend 600xp to go from level 2 to level 3 even if you are already a level 10 or so in another class. There will be ways to lose the stored but not spent Experience, so it needs to be like it's a GM controlled currency.
Forgot to mention that I am wanting to know if this could be implemented in a character sheet?
