Whenever I go to build a new character in the charactermancer I only have Custom as an option to roll abilities. What happened to Standard Array and Point Buy?

You need to have the PHB as part of the servers library. Sadly, they are not default options that's included with the SRD rule set.

There was a bug that temporarily removed the other ability score generation methods, even for those with an enabled PHB. It is my understanding that this has been fixed.
