I'm trying to set token bars to a health value of a character and it doesn't seem to work. I've tried @{character name|hp} and [[@{character name|hp}]]

You are a player in your campaign, I assume? The gm can link token bars to attributes of the linked character sheet via a drop-down menu in the token settings. The content in the token bar bubbles isn't parsed like the chat, so attribute calls aren't resolved, but linking the bar to an attribute via the settings lets you change values both ways.
