for example: I'm running Pathfinder, but I have skills that are not on the default sheet. Is there a way to add them?

I have thought it would be nice for sheet creators to create a way to make their sheets more changeable, but this i strictly on the sheet creator - or modifier, as Scott suggests. It would be extremely hard to do this,and there is no standardised wayt o do it - whoever does it firsdt would be creating the standards.
If you do take the sheet's code and modify it, you wont automatically get any updates. This won't matter for many sheets which arent updated any more, but if the sheet is regularly updated, you might reconsider.
