There are "custom" options for some of those things, but in general, if you don't have the source, the safest thing to do is to edit the sheet manually with cut and paste or just plain typing.
Is it as easy as just copy & paste a subclass into my Feats, or do I actually have to adjust the numbers to get things to work? Because that sounds more complicated and I definitely would not know how to do it.
You would need to copy and past individual features. It's difficult to say how much work this will be without closely examining the class. Spells will need to be manually dragged on if not using the Charactermancer, for instance. Many users forgo using the CHaractermancer altogether, due to some quirks they find difficult to work around, so the task should not be too onerous.
BTW, you said "Charactermancer", so I assumed the D&D 5e (2014) Sheet. If this is the new 2024 sheet, that's the "Character Builder", and it is much more difficult and involved to create manually.

I can help you with how to set this up.
There are two ways, one via the Charactermancer, and one manually.
I recommend the manual method, it is easier and more straightforward imo.
1: Hover over the cog and click it to show the subclass entry field.
2: Type in the name of your subclass. Click the cog (#1) to close.
3: Click the plus
4: Hover over the space, click the cog, then fill the entry with your subclass ability. Click the cog to close. Repeat as needed.
