I looked in the help page but couldn't find a list of syntaxes. So I have to ask, is there a syntax to change an attribute without pulling up the character sheet? Like if a character spends 50 gold can I just type [PI{(Player's Gold)-50}] or something?

There isn't a built in way of doing that, but there are quite a few API scripts that give you that ability, more or less.
