Questions for DM's

Not to sure if this is the right place to post this So in the campaign I have a very important character whom is going to be "the chosen one" I guess you can kind of think of it as Frodo from LOTR. In the campaign the chosen one is going to be sent on a journey to seal evil away yada yada yada,, My question is do you think it is safe to choose a player to be the chosen one or if I should make a NPC that travels with them. I'm worried about a few things. First if they die it's basically game over, second what if the player decided they just don't care about saving the world the story will also be over.
My suggestion would be to have a story plot of four (or whatever number) chosen ones whom the gods have gathered to face an enemy, but don't reveal if in fact it is the four that begin the quest or if in fact it is the four who actually meet over time and in fact face the enemy! I'm sure there are better ways to handle it but this would be my suggestion...
