If I, the DM, own VgtM content in roll20, will my players be able to see those racial options when looking in the compendium? Or is there someway of making a handout about the racial traits for the new playable options?

They wont be able to see them, but dragging any compendium entry from the compendium will create a handout for that entry. Then just click show to players.
