Scaling Random Encounters for Storm Kings Thunder

I'm running a Storm Kings Thunder group with 6 characters, they just recently hit level 6 but it feels like none of the random encounters are even slightly threatening as they are stated in the guide. Any tips for how you guys would make them more difficult or threatening without making it ridiculously over powered? Trying to find a balance of things being challenging, sometimes the encounters seem so easy that it's just a waste of time to run them.
