If a particular language has been translated (there are "placeholder" json files in the translation folder for the various languages roll20 supports, but usually... not all have been translated from english) the sheet will show the language based on your roll20 language setting. FYI: sheet authors must include the necessary localization code(i18n and translation.json) for a sheet and someone needs to actually make a translation json for a particular language for the sheet to be converted. Hope this helps.
You go to your Account page, and change your language to the one you prefer. Then you just normally use character sheets, they will be in your preferred language if they have been translated.
