That's really odd - do you have a screenshot, by any chance? Does this happen with any global modifier, or a particular one? And does every attack in your Attakcs & Spellcasting section get altered?
I am having the same issue. It seems to only be a problem with compendium items. Drag a rapier +1 to a character sheet and it rolls ok except it doesn’t have the weapon attack bonus. Try to fix it by adding a 1 to attack or to magic bonus boxes and then it glitches out the same way. Damage dice becomes 1. If you just add a custom attack entry, all the fields seem to work as expected. Very annoying.

That's odd, dragging a Rapier +1 from the Compendium, it all looks good to me, with the +1 magic bonus. Do you have a screenshot of a freshly dragged Rapier +1 by any chance?
This is a fresh Rapier + 1 I dragged to the character sheet. If I change anything in the attack section, the weapon flips out. Here, I added 1 to Magic Bonus and it seemed to take it. Then I removed the + 1 from damage and it instantly reset the values to: Note that this all seemed to happen after I bought the Dungeon Master Compendium and added it to my existing game. Maybe just a coincidence. I have noticed that a large number of items are totally broken that the Dungeon Master Compendium added (like all of the belts of giant strength add the number to your strength rather than set your strength to the value)

Yeah, sounds like it could be the DMG then. Do you own the PHB?
Yeah, I have purchased the PHB as well.
FYI. I figured out what was going on. The DMG is just full of bad items now. I had some characters with items pre-DMG purchase that weren't all screwed up.   Here is the item's MOD line from the new bad Scimitar + 1: "Item Type: Weapon, Damage: 1d6, Damage Type: slashing, Melee Attack +1, Melee Damage +1" Here is the old working Scimitar + 1: "Item Type: Weapon, Damage: 1d6, Damage Type: slashing, Melee Attack s +1, Melee Damage +1" Note the missing "s" on "Melee Attack". That causes it to drop the attack bonus. No clue why this makes the item flip out when you edit the attack directly though. As mentioned, this isn't the only thing broken. The giant belts for example, the Belt of Hill Giant Strength: Bad: "Item Type: Wondrous item, Strength 21" Good: "Item Type: Adventuring Gear, Strength : 21" Note here the missing colon after Strength. The bad items will just add 21 to your strength score. Another example, Gloves of Thievery: Bad: "Item Type: Wondrous item, Dexterity (Sleight of Hand) +5" Good (I manually fixed this in the item MOD since they didn't exist before): "Item Type: Wondrous item, Sleight of Hand (Dex) +5" Note the skill name. The item has provided by the DMG actually adds 5 to your dex score.  Since we have no way to actually edit the compendium, it would be nice if these issues were fixed considering we had to pay money for the DMG. Basically can't trust any item that comes out of it at the moment.

Ah yep, good research! That item mods section is in serious need of an update, the method used to search the mods, the priorities in the IF statements, and the lack of documentation are all problems. I did post about this in the 5e character sheet thread, but got no response. Someone else... maybe Anrdreas? also posted about the lack of documentation, I don't think that got a response either. The fact that even the people entering Compendium data can't get it right certainly highlights the extent of the problem. 100% agree with you though, the DMG should not have been released in its current state. I can't imagine too much work will be done during the Xmas/NY period either.
