I am currently trying to use Roll20 via safari on my iPad (latest OS). Most things still work but I am unable to see my character sheet under the journal tab. Anyone know of any fixes for this?

Roll20 is not designed (currently) to work on mobile devices, and also doesn't work well for Safari.  You might  have better luck using Chrome, but as it's still on a tablet the functionality is still pretty limited. But Roll20 is working on a new mobile app.
