Does anyone know if there is a way to edit the standard character sheet, to add new skills and other homebrew options, without having to build a new sheet from the ground up?
The "by Roll20" sheets are proprietary. There are older versions on github but they are very out of date. You could add homebrew skills and abilities as token or macro bar actions on the "Abilities and Attributes" tab.
Alternately, you can use one of the other D&D 5e character sheets. I believe that some of them have the ability to rename skills or add custom skills.
By "standard sheet", I'm guessing you're referring to the 2014 sheet - the workaround for that is to add a proficiency and refer to it as a skill. In addition, the 2024 sheet allows for adding custom skills and more! :D
