So, I don't know if this is already an option, and I can't figure out how to do it, but I would love to be able to add an overlay that applies to all my maps - so that it shows my in-game time/date. I know there's a way to add it to individual maps, but I would love the option to just add it to one map and it applies to all in one go, rather than having to add/change them all individually as days progress. Thanks!
I love this idea! It wouldn't have to be a large display: maybe just a customizable clock/calendar that appears in the corner of the screen that ignores the zoom level, like the existing screen menu and zoom slider. Maybe even in the right side menu at the top under the tabs or at the bottom under the chat window. It's probably doable with an API script (MOD), but having the option for all subscription levels would be nice.

Could also make it so each player could also adjust the visibility. For example, full opacity might be distracting to some players, but having it be a little faded might be alright, and they can focus on it whene they need it.

There’s a Mod —  Calendar and Weather — that might do something like what you want.  I haven’t tried it, so I can’t say for sure. Otherwise, I’d suggest ScriptCards to control a Token & Token Markers on the Foreground layer in a Jumpgate game. ;)
I gave it an upvote since it could be handy and great to have all in one interface, but I wound up paying $2.50 a month for Fantasy Calendar since I've got some very specific needs.  It'd be awesome if roll20 implemented them so I could stop paying for an extra service.  The obvious first need for me is real world calendars going back a really long ways (I've run games as early as 730AD and have some ideas for games in ancient Greece and Mesopotamia), which is not that hard to implement.  Since I run Vampire and Mage I need to track things like what time the sun rises and sets each day with it being longer days in the Summer and shorter days in the Winter.  I also need to keep track of the moon phases for magick plus I've got a Malkavian with Lunacy.  Obviously the moon phase tracking would be great for anyone running Werewolf.
This would be very useful for keeping an eye on the in-game time and date, to subtly remind the players they've been in the dungeon for an entire week due to all the long rests and now they might be presumed dead.  Or that they just spent all day shopping.
