When I set up a map with map size and grid size, I assume that's then fixed for all players. But if I change the zoom facility, does that change the players' zoom as well?

zoom is per machine/browser. You can zoom all the way out while someone else can zoom all the way in at the same time. Map and grid settings are global and affects everyone the same that enters the room and view that page.
