I feel like NPC sheets should have spell books like PC sheets do. I mean NPCs can be spellcasters too!

You can always use a PC sheet for an NPC if you want to do it that way.  Most of the NPC spell casting is simplified in the monster manual, hence why it is simplified on the sheet.

The 5E Shaped character sheet does have a spell book for NPC sheet.
