I saw a number of posts related to adding sight to character tokens but I don't see any option for doing so on my tokens. Is this not an option available for free users or am I just missing something?

Dynamic Lighting is a subscription feature so it is not available to GM/DMs using a free account.  If the GM/DM has a paid account then all the players will benefit from the options on tokens.
