Where do I add the weapon/attack info for an NPC?  Do I configure that under Actions somehow?  If so, can anyone give me some pointers on how that works?  Thanks in advance!

Yes!  You go to the 'Actions' section and click the [+] looking button to the bottom left of the action section. Then if its an attack/weapon, click the [ ] Attack check box to open up more options for the attack.
