Is there a way to add other custom resources to an NPC sheet? Like a sorcery points, or a homebrew system of some kind.

Not to the NPC sheet, but you can somewhat accomplish this in two ways: 1 - an attribute in the Attributes & Abilities tab. You have to be on this screen to view though. 2 - A trait on the NPC sheet. You have to manually modify this though.
