I understand that it'll be variant upon many of my players resolutions but ideally what should I be looking at for an appropriate landing page size so that people don't have to zoom or drag around a lot?

Obviously roll20's vtt and browser take up some of the screen real-estate as well. I would start with a 1366x768 background and resize downward keeping your aspect ratio until you get something you like.
Also, poll your players and ask their resolutions. If they are all on desktop systems and happen to be in North America, my guess is that they would skew pretty heavily to 1920x1080.
