This section of the wiki can help. Basically, You can input customs skills in the Tool Proficiencies and Custom Skills section below the regular skills section. You could put custom saving throws in there too, since the roll structure is similar.

It would be on the character sheet. Here's a screen shot of a custom "Arm Wrestling" skill. It is strength based, and the character is proficient.
