I have had this issue with the pathfinder 2e sheet as well. The above advice works for almost any other sheet, but for some reason, pf2's fails to actually populate those fields sometimes. I've had to do it manually for my pf2 games. As a pro user, you can use the API to help though. Using the TokenMod script, you can use a command like below (though double check this works, I might have the syntax wrong) !token-mod --set bar1_link|hit_points bar2_link|hero_points bar3_link|initiative and set that to a macro so you can select groups of tokens and update all of them quickly.
