Is there a way to set up Bar 1-3 by default?

Is there a way to set up what Bar 1-3 use from a character sheet by default for tokens so I don't have to set it up for every token per game?

This is on the game settings page. Some sheets will have more options than others. Setting you change here will affect new characters. To have them affect characters already in the game, go to the "Experimental Features" section at the bottom of your settings tab in-game. You can apply defaults to in-game content there. It should change everything but default tokens you have already assigned (i.e. not on the table top).
I must be confused... Because That did nothing... Before I made this post I set up the token setting in Game Setting and applied default as you say... Nothing happened. You go to game settings. Set to everything you want then make sure to SAVE, it's way at the bottom. After that every new token you create should have your defaults. This won't change anything for tokens that already exist or tokens on a map or tokens you have saved in character sheets. If you want to apply the setting to all tokens that exist on any map, go in to the game, then at the bottom of the settings tab there is "experimental features" as Keithcurtis said. If you're looking to update a token that is saved to a character sheet you have to do it in a certain order. I am still missing something or doing something wrong.. I did all that and nothing happened.. I changed the Defaults in Game Settings (See pic above post) I added tokens to map. I used the Default Token option in experimental features. Nothing Changed the the Bars on the Tokens are still blank.
I tried it again, and I noticed it is not instant.. So waited for it to complete.. Still nothing.

I have had this issue with the pathfinder 2e sheet as well. The above advice works for almost any other sheet, but for some reason, pf2's fails to actually populate those fields sometimes. I've had to do it manually for my pf2 games. As a pro user, you can use the API to help though. Using the TokenMod script, you can use a command like below (though double check this works, I might have the syntax wrong) !token-mod --set bar1_link|hit_points bar2_link|hero_points bar3_link|initiative and set that to a macro so you can select groups of tokens and update all of them quickly.

Well Almost... It is giving the Skill Bonus that you select for Initiative and not adding any modifiers you might have.&nbsp;
I am guessing the Initiative attribute does not include the modifier.
Still though it cuts down setting up tokens significantly even with the fixes I need to make.&nbsp;&nbsp;

Hmm. I have not gone through those steps on that sheet because I don't play PF or PF2. I hope they are not as problematic as they sound.
