For some reason it's just not appearing anymore when I right click a map. I don't see why this would ever get removed so I'm assuming it's just a bug on my side or something.

Are you sure you were not using a third party extension? "Set Dimensions" is under the advanced menu on the token right-click menu, and there is a re-sizer script that will do this.

Also, be sure your map image is on the Map Layer.
