How would I setup a "tracking" type sheet? It would track sanity successes and failures so for example- when player 1 freaks on a zombie, and player 2 and 3 don't I can put that out in the open for all to see. This will help with my memory of things as well as the players. What this will do for me is in the future, when player 1 sees a zombie they will immediately lose some type of sanity due to the "first times a charm" failure and then they drop into the bout of madness table. Player 2 and 3 will still either get a pass, or have to roll depending on what gruesome activity the zombie is doing. I feel tracking situations or monsters will cut down on any rule lawyering about sanity. It might not happen but I also know my memory can get bad as well as the others and I'd rather be consistent for them and myself.

Probably a handout is the easiest way to handle that manually. You could write a script to make the interface easier if you wanted. NoteLog is a script that might help.
