Update: To remove the grid, I had to go to the map token and remove it in the token’s advanced settings. Backdrop color - still does not work.

It sounds like in your game's default settings you have "Show Grid" toggled on, so all new tokens (which is any thing you drag onto the page) are setting that value by default.
