Correct process for de-linking tokens from each other

Hi everyone. I previously ran Curse of Strahd for 18 months but it has been about that long since we finished. We are now playing Odyssey of the Dragonlords and there are a lot of fights where the PCs are up against several or even many of the same monster type. In some cases I am using the module monsters and sometimes those from the Monster Manual (where I had to replace blank images from the module). I noticed last session that i dragged out 4x Centaur andtook some HP off one of them that they all changed. My quick hack was to double-click on the token and remove the "Represents Character" selection but that feels bad if i happen to close the Centaur character sheet. What is the best way to set up multiple tokens with the same sheets but not linked?
Place one copy of the token on the map, double click on it, and for the bar that is tied to HP, change the HP to None. Then open up the sheet for that token, hit the Edit button, and remove the Default Token and save the newly edited token in its place. Now all the tokens you bring out will have the correct amount and bar for their HP, but they won't be tied to the sheet so they won't affect any other copies. Thank you that helps. I normally have the stats linked because the tokens I set up are mostly PCs and their NPCs. It makes sense that it has not come up before.
